These crunchy peanut butter balls are perfect for a crowd and an easy dessert to whip up in a flash!
Y'all know how much I LOVE any kind of dessert. Especially if it has peanut butter or chocolate in it. And the combination of those two makes an absolutely PERFECT dessert.
I remember when I was younger, I had a best friend who's mom was ALL about health. She was the mom that would make wheat pancakes for breakfast and we would have fruit for every snack. I was not used to that at all because my mom was the complete opposite! Every time I would go to her house I would wonder what kind of food we would have and if I would like it. But one day, around the holiday season, I walked in the kitchen to her making these glorious peanut butter balls. I just remember being SO surprised to see her making these! But they were delicious, and we all ate them up in just a few minutes. So, ever since that day, they have been a frequent treat in my house and we love them, especially around Christmas!
When Mrs. Courtney Lynn told me she was launching an e-cookbook called Potluck Perfect in September and needed a few bloggers for her launch team, I knew that was going to be right up my alley! Especially since the holidays are coming up, I know there are going to be many potlucks my family will be invited to and so many things I have to make. I was so excited to see a recipe for peanut butter balls in her cookbook!

Even if you aren't making for a crowd, the recipes are easy to half or third as well. They use simple and yummy ingredients too!

CRUNCHY PEANUT BUTTER BALLS
Makes about 7 dozen
From Supersize Family Kitchens
- 2 cups peanut butter
- 2 jars (7 oz each) marshmallow creme
- 3 cups crisp rice cereal
- 3 cups semi-sweet chocolate chips
- 2 1/2 tablespoons vegetable shortening
Lay a 15-inch length of parchment paper on the counter, set aside. In a large mixing bowl, combine peanut butter and marshmallow crème. Add cereal and stir until well coated. Roll into 1-inch balls, set aside. In a microwave-safe bowl, combine chocolate chips and shortening. Microwave for 1-2 minutes, stirring at 30-second intervals, until chips are mostly melted, stir until smooth. Dip peanut butter balls in chocolate and place on parchment paper until chocolate is set up.
