If you're in the mood for all things pumpkin, try this amazingly good Pumpkin Peanut Butter Poke Cake!
Fall is one of my favorite holidays (if you've been following my blog for a while I'm sure you knew that!). I have plenty of reasons why, but my most favorite part is the FOOD!
I am obsessed with all things pumpkin. About the time when school starts back every year, I stock up on it at the store for all of the many desserts I plan to make. Most of the time, I make a whole bunch of things (because I can't just pick one!) and eat on them for a day or two. Then they sit on my counter for a few days until I bring them to my mom or grandparents for them to eat. Haha!

This cake is absolutely as delicious as it looks. It's the perfect fall dessert that would be great for a potluck or church event. And it's so quick and easy to make! The only thing that would have made it better would be either Twix candies or mini Reese's cups on top. I would have LOVED to crush some of those babies up and put them on top of the cake, but unfortunately I didn't have any on hand and couldn't run to the store. So I decided to use what I had on hand as the next best thing. Peanut Butter sauce!
We got this delicious sauce from the Der Dutchman Amish restaurant in Florida and it is seriously so good. I was afraid it might be TOO much peanut butter for this cake, but can you really ever have too much peanut butter?
If you don't have this particular sauce, you can use Reese's peanut butter dessert topping.

PUMPKIN PEANUT BUTTER POKE CAKE
For the cake:
- 1 box yellow cake mix (just the mix, NOT the oil, eggs, and water to make the cake)
- 1 can (15 oz) pumpkin puree
- 1/2 cup whole milk
- 1 tsp pumpkin pie spice
For the topping:
- 1 cup creamy peanut butter
- 14 oz sweetened condensed milk
- 1 (8 oz) box cream cheese, softened (I put it in the microwave for 15 seconds and it comes out perfectly)
- Peanut butter sauce
- Optional: Chopped Twix candies or mini Reese's peanut butter cups
Preheat oven to 350 degrees. Mix together all the ingredients listed above for the cake. Pour it into a greased 9x13 baking dish and bake for 30 minutes. While the cake is baking, mix together the cream cheese, peanut butter, and sweetened condensed milk until smooth and creamy. When the cake is cooled, poke holes throughout it with the end of a wooden spoon. Pour peanut butter mixture on top of the cake and spread it throughout. Top with peanut butter sauce and Twix or Reese's if desired.
